Castellón's cuisine combines the best of the Mediterranean Sea, the local farms and the rugged inland region of Maestrazgo to obtain simple, delicious dishes that enjoy tremendous fame.
Castellón's dishes are great examples of Mediterranean cuisine. From the sea they take their excellent fish and seafood, like red mullet, sole, gilt-head seabream, octopus, mantis shrimp, sardines, clams, sea dates (Lithophaga lithophaga), sea cucumber and particularly the magnificent prawns from Vinarós. These products are the best ingredients for paellas, all i pebres, suquet (traditional Catalan fish stew), seafood casseroles and seafood stews.
Aside from fish, however, in Castellón you can also find a sort of inland cuisine, where the main ingredients are meat and vegetables, usually flame-grilled. These include artichokes (with Designation of Origin in Benicarló), cured ham, cured meat and regional cheeses, particularly the one known as Tronchón, made in the border with Teruel. If you get the chance, try the delicious flame-grilled lamb chops, the roast lamb, the partridge hotpot and the very typical Maeztrazgo-style roast rabbit, which concentrates the aroma of mountain herbs, enhancing the flavour of the meat.
