As in the rest of the Valencian Autonomous Community, here rice has a great relevance in homes and restaurants. It is prepared in many different ways, with almost anything: vegetables, meat, fish, poultry, etc. Paella, a traditional dish, can be made with seafood, meat, or both. Other rice dishes are arroz a banda (rice with fish), arroz negro (rice with squid cooked in its own ink), arroz con costra (rice with an egg crust), arroz con pata, etc. Everyone visiting the province will be able to find a rice dish that suites their taste. Giraboix is a traditional hotpot from Jijona, made with potatoes, hard-boiled eggs and sausages. Olleta de músico ("musician's casserole") is made with white beans, lamb liver, lamb lungs, black pudding and Swiss chard stems. Many other recipes can also be found in this region, examples of a traditional and delicious cuisine.
