In Jaén we can find excellent meat, specially game. Small game, like partridge, rabbit and hare, and big game like wild boar, roe deer, buck and red deer are the staple of Sierra de Cazorla's cuisine. This food is so popular that its influence can be felt in the rest of the province. Try the excellent baby goat with garlic from the region and the choto al ajo cabañil (goat fried with garlic and saffron). In this province, the meat processing industry is very important, mostly dedicated to pork. Like Córdoba, Jaén is a great place for flamenquín, a steak that is wrapped with cured ham, breaded and fried that will surprise thanks to the excellent combination of flavours. The excellent treatment given to cod in Jaén makes up for the lack of fish. Cod is prepared in a number of ways, but specially roasted and Baeza-style, a delicious recipe that takes pine nuts, peas and sweet peppers.
Jaén is famous for its great-quality fruits, like cherries, morello cherries, peaches, apricots, pears, apples, quinces, persimmons, figs, early figs, melons and water melons that constitute a delicious and healthy way to end a great meal.
