This region produces meats of the highest quality. Oxen from the abattoirs of the province of A Coruña are considered to be of exceptional quality. Pork is used to make a wide variety of sausages. Pork meat is the main ingredient of rich dishes like Galician stew and the classical shoulder of pork with turnip tops, potatoes and Spanish sausage cured with paprika. We must not forget a delicious speciality: the Galician style tripe, escorted by chickpeas and seasoned with cumin.The local farms produce turnip tops and turnip leaves and we must mention the great potatoes from the region of Bergantiños and the peppers from Padrón, the best known of all, although the peppers from Narón and Betanzos are also very good.
When it comes to cheese, the province of A Coruña produces a good part of those that belong to the Designations of Origin Ulloa-Arzúa and Tetilla, always made with cow's milk. When it comes to desserts, we must begin by saying one thing: the filloas, very similar to crêpes and common everywhere in Galicia, are nowadays made with milk, flour and eggs instead of the traditional recipe which included pork stock or pig's blood in the dough.
