Because the coastline of the province of A Coruña is so vast, the local food mainly consists of seafood. The list of fish and shellfish is very long, each item of excellent quality.
Fish and seafood are the staple in the local recipes, most of which are simple and keep the natural flavour of the ingredients. Local produce and meats, specially beef and pork, are also an important part of the culinary tradition, which manages to combine popular recipes with the more elaborate and aristocratic recipes from cities like A Coruña, Santiago de Compostela and Ferrol.
It makes sense that the first thing that a visitor looks for in this province in the north-western corner of Spain is seafood. And no one will be disappointed. Probably, the king of all of A Coruña's shellfish is barnacle, which finds in the rough shores of this Galician province the perfect habitat. Seafood here is abundant and excellent, with velvet swimcrab, spider crab, shrimp, Norway lobster, lesser-slipper lobster and European lobster. Molluscs include clams, oysters, cockles, mussels, scallops, variegated scallops and razor shells. Very delicious savoury pies are made with cockles, scallops and variegated scallops. We must mention two molluscs that Galicians do not consider to be seafood: octopus and cuttlefish from the A Coruña and Sada estuaries. Octopus is generally prepared á feira, with olive oil, coarse salt and paprika. The best known speciality is the caldeirada, a fish stew made with plenty of wine and several different fish, potatoes and a special sauce called allada, made with olive oil, garlic and paprika. During the summer, the air at the ports and beaches fills with the tempting smell of sardines roasting on the grills.
