Jaén is the biggest producer of olive oil in Spain. Famous in the peninsula since Roman times, olive oil is the most appreciated oil in Spain, an ingredient that has been an essential element in Jaén's cuisine since ancient times.
In Jaén, they have exceptional vegetables and garden produce included in a myriad of dishes, since the farms are the most common element in the whole region. Tomatoes, onions, cucumber, bread and sometimes apples are the ingredients of gazpacho (a cold soup) as well as of a good pipirrana salad. The farms of Jaén provide aubergines, peas, lettuce, beans, wild asparagus and more. These vegetables are really tasty when grilled with a few drops of oil, what is known as asadillo jiennense. Alboronía (also spelled almoronía) is an excellent dish of Arab origin that consists of baked aubergine with potatoes, tomatoes, peppers and dried beans. Excellent soups can be made with king oyster mushrooms, part of Jaén's spoon cuisine. We must also mention other delicious dishes like chard and spinach stew, white beans with partridge, cocido (meat, potato and chickpea stew), migas (fried breadcrumbs), ajoharina (Andalusian potato dish), judías palmeras and Carmelite-style stew.
