The region of Valencia lies in the east of Spain. It borders Catalonia in the north, with Aragon and Castile-La Mancha in the west, with the region of Murcia in the south, and with the Mediterranean sea in the east.
The cuisine from the Region of Valencia enjoys great prestige at both a national and international level. Its traditional recipes are prepared using natural ingredients such as oil, vegetables, spices, fruit, fresh meat or fish and has come to be known as "the Mediterranean Diet". The incredible variety of rice dishes and desserts is outstanding. All this without forgetting the great variety of fruit which the Region of Valencia produces in abundance. Its traditional soft drinks have also become well-known, such as tiger nut milk ("horchata de chufa"). Its long wine-growing tradition has given rise to a delicious range of wines with their Denominations of Origin, which when added to the local soups comprise some of the most exquisite recipes of Valencian cooking.
We recommend you begin your sightseeing trip on the Tossal de Manises, a small hill which holds ruins of Lucentum, the first settlement of Alicante. The Ibero-Roman town is an important archaeological treasure and is now a protected national heritage. You will see ruins of buildings, pavements and thermal baths. The castle Santa Barbara is one of the largest medieval castles in Spain. It stretches over the mountain Benacantil. Historians have found traces of the bronze age as well as from Iberian and Roman settlements.
The land around Alicante has been inhabited for many thousands of years, with the first tribes of hunter gatherers moving down gradually from central parts of Europe between 5000 & 3000 BC. Some of the earliest settlements in the area were around the slopes of Mount Benacantil, today occupied by the Castle of Santa Barbara.
It was built in the Herrera style with a single nave and several adjoining chapels. The main fronts of the cloister are from a pervious temple, from the 15th century, as is the bust-reliquary of Santa Felicitas.
El Fondó Beauty Spot is located in the district of Baix Vinalopó, near the towns of Elche/Elx y Crevillente, in Alicante province. Numerous streams flow into El Hondo reservoir. There are two reservoirs, Oriente and Levante, with an 11 and 5 million cubic metre capacity, respectively, that are supplied by the Levante Canal.
